Fresh Pasta Salad



One of our favorite poolside summer snacks is Fresh Pasta Salad, by itself or with some barbecue it never goes to waste.   I like to use a veggie pasta cooked al dente, no one ever knows the difference with so much flavor packed in, and it is a great healthy alternative. Here is what you will need: 

12oz pasta of choice (Ronzoni veggie pasta pictured)
1/2 cup chopped olives
1/2 cup chopped red onion
1/2 cup chopped red bell pepper
1/2 cup chopped tomatoes
1 chopped cucumber
1 cup cubed fresh mozzarella 
Italian dressing to taste ( I use a little more than half a bottle of Marie’s) 

  

Cook pasta to al dente, set aside to cool and dry for 2 to 3 minutes. Drizzle with Italian dressing and gently mix to coat the noodles and prevent them from sticking. Place the pasta in the refrigerator to cool. When chilled add in your chopped veggies and cheese. 



Gently mix ingredients together before adding more dressing to taste. Mixing before adding more dressing prevents the cheese from squishing. I hope that you find this easy delicious recipe  easy and delicious too! Tag me to your fresh pasta salad on social media @nichoelleadler
